Pure spices, such as ground Black Pepper, ground White Pepper and ground Nutmeg are often blended down with cereal, maize flour or rice flour to lower production costs, resulting in a product of inferior quality still sold at a premium. You will be pleased to know that the Scott & West line of Premium and Pure Spices are exactly that – 100% pure, unadulterated ground whole spices. These intense spice products have a strong flavour and a little goes a long way; use them very sparingly in cooking, adding tiny amounts to taste.
On the other hand, spice blends like BBQ Seasoning and Chicken Seasoning are usually diluted to form a well-balanced product. That will allow the proper application to food. If the spice blend is too strong you could easily over-spice your meal, but in a diluted form it can be sprinkled onto food liberally in order to achieve a pleasant and flavourful effect that is not too spicy. As an added convenience most of the Scott & West Spice Blends & Seasonings already contain salt, so there shouldn’t be any need to add more salt to your meal when using them. Be sure to taste the food while adding spices and make small adjustments so it isn’t too strong or too salty – it is easy to add more but impossible to rectify once you’ve added too much.
Today, the majority of spices available on the market are irradiated. While this process is generally considered safe, many First World countries limit or prohibit the irradiation of spices because the long term results of submitting food products to even low grade ionizing irradiation is inconclusive as yet. In keeping with world standards, Scott & West spices are NOT irradiated – as such, they are however prone to deterioration in the same way as any other agricultural product. To prolong the life of your spices and preserve their natural flavour, store them in a cool, dry place away from direct sunlight.
